Chef Chai’s Special Monthly Wine Dinner 

One night only, Tuesday October 14, 2025, $125 per Person

Earlier this year, I spent two weeks in France immersing myself in the vineyards, cellars, and traditions of some of the country’s most celebrated estates. The journey took me to Champagne, Burgundy, Beaujolais, and the Rhône Valley, where I met directly with winemakers, walked the vines, and tasted vintages at the source.

This upcoming wine dinner is a reflection of that experience — a carefully curated showcase of the wines that left the strongest impression on him during the trip. Guests will be welcomed with Taittinger Brut La Française NV, one of Champagne’s most enduring houses, renowned for its finesse and elegance. From Burgundy, Maison Louis Jadot represents the region’s classic expression, with both the crisp minerality of Chablis and the supple depth of Côte de Beaune-Villages. In Beaujolais, I highlight Château des Jacques, a benchmark producer in Moulin-à-Vent that shows the true potential of Gamay in the hands of master winemakers. From the Southern Rhône, the vibrant Château d’Aqueria Tavel Rosé brings both freshness and complexity, pairing beautifully with Mediterranean-inspired flavors.

By bringing these wines together, I offer guests not just a dinner, but a glimpse into my personal journey through France — sharing stories from the vineyards and insights from the winemakers themselves, all paired with Chef Chai’s signature cuisine.
